Christmas Baking Ideas Easy | Festive Red Velvet Cupcakes

This dessert comes not only with great taste but it will also look stunning on your dinner table. The rich red colouring looks both seasonally attractive and will accentuate it's look.

Ingredients

Cupcakes

  • 225g Self-raising flour
  • 25g  Cocoa powder
  • 150g Brown sugar
  • 70ml coconut oil
  • 2 eggs
  • 1 teaspoon vanilla essence
  • 125ml buttermilk
  • 1 tablespoon red food colouring
  • 1 teaspoon bicarbonate of soda
  • 1 tablespoon white vinegar
  • Sprinkles for decoration

Frosting

  • 250g softened cream cheese
  • 150ml Coconut Oil
  • 250g icing sugar
  • 1 teaspoon vanilla essence

Variation: Instead of Coconut oil you can use Copha brand coconut butter.

 

 

Preparation

Cupcakes

  1. Preheat oven to 180°C (fan forced 160°C)
  2. Line a standard 12-hole cupcake/muffin mould with paper cases for standard sized cupcakes, or a 24-hole pan for mini-cupcakes
  3. Sift together self-raising flour and cocoa powder. 
  4. Mix coconut oil and brown sugar and eggs one at a time in a mixing bowl
  5. Combine vanilla essence, buttermilk and food colouring and, microwave on high for 30 seconds. 
  6. Add flour mix and buttermilk in batches
  7. In a small bowl, stir together the bi-carbonate soda and vinegar.
  8. Add to the cup cake batter.
  9. Divide batter equally into the prepared mould and bake for 15 – 20 minutes
  10. Set aside for 5 – 10 minutes in the pan before turning onto a wire rack for cooling.

Frosting

  1. Add coconut oil, cream cheese and icing sugar to a mixing bowl
  2. Beat with a spoon or an electric mixer until the mass is soft and consistent

Assembly

  1. Fill a piping bag fitted with a 2cm nozzle with frosting.
  2. Pipe swirls over the cakes.
  3. Decorate your cakes with sprinkles
