An amazing recipe that combines sweet decadence with the twist of peppermint. This one is definitely one of our favourites.
Ingredients
- 1 Cup cracker crumbs
- 3/4 Cup sugar
- 1 /3 melted butter
- 1 1 /2 cups sour cream
- 2 eggs
- 1 Tbsp flour
- 2 teaspoons vanilla essence
- 500g cream cheese, softened
- 1 /2 cup candy, coarsely crushed
- Whipped cream (optional)
- Chocolate leaves, candy for decoration or sprinkles
Preparation
- Preheat oven to 170C degrees
- Mix together cracker crumbs, 1/4 cup sugar, and 1/4 cup melted butter in bottom of ungreased 8" cake tin pan; press mixture evenly over bottom.
- Using a blender or a food processor, blend sour cream, remaining 1/2 cup sugar, eggs, flour and vanilla until the texture is smooth.
- Add cream cheese and continue blending; then add and blend 2 Tbsp of melted butter until completely smooth.
- Stir in crushed candy , then pour the mixture over the crust in the pan
- Bake in lower part of oven for 45 minutes.
- Remove, from the oven and allow to cool
- We recommend refrigerating for at least 4 hours (or even overnight)
- Decorate as desired (for additional decoration consider using a cake stand)
